10 Chicken Recipes To Try In July

It’s July and you don’t know what to cook for dinner. You crave chicken but don’t have time to mess around making a complicated meal.  We’re going to tell you about 10 chicken recipes that you need to try this July.

1. Chicken Soup

2 tablespoons olive oil

1 onion, chopped

2 carrots, sliced thin

4 celery stalks, sliced thin

3 cloves garlic, minced

1/2 teaspoon salt

1/2 teaspoon pepper

8 cups water or broth (you may need more or less depending on how thick you want your soup)

Step 1: In a large pot over medium heat, add oil and saute onions until soft – about 10 minutes. Add carrots and celery and cook until soft – about 10 minutes more. Stir in garlic and cook for 1 minute more. Add salt and pepper; stir to combine well. Add water or broth; bring to boil then reduce heat to low and simmer for 30 minutes uncovered (or longer if you’d like).

Step 2: Remove from heat and cool slightly before serving with some crusty bread!

2. Chicken Pot Pie

2 cups cooked, shredded chicken

1 tablespoon butter

1 cup chopped onion

2 tablespoons flour

2 tablespoons cornstarch

1 cup whole milk (or half and half)

2 cups chicken broth (or water)

1 teaspoon salt and pepper to taste (more or less)

1 tablespoon minced parsley (optional)

Step 1: Cook onion in butter until tender. Add flour and cornstarch and stir together until well blended. Add milk, broth and seasonings; bring to a boil over medium heat, stirring constantly.

Step 2: Reduce heat to low and add chicken; cook until thickened slightly, about 3 minutes. Spoon hot filling into four 1/2 cup ramekins or one 9 inch deep dish pie plate. Remove them from the pan and serve immediately.

3. Fried Chicken

a frying pan

cooking oil (we recommend vegetable, or canola)

1/2 cup flour

1/2 teaspoon salt

1/2 teaspoon pepper

1/2 teaspoon paprika (optional)

1/4 teaspoon garlic powder (optional)

3 pounds chicken cutlets, skinned and pounded to 1/2 inch thick.

Step 1: Heat the oil in a large deep skillet to 350 degrees F (175 degrees C). Whisk together the flour, salt and pepper in a large bowl until well combined.

Step 2: Add more spices as desired. Dredge each piece of chicken through the flour mixture until it’s completely coated with flour and then add it to the hot oil.

Step 3: Fry for about 5 minutes per side (or until cooked through). Drain on paper towels and serve hot with your favorite dipping sauce!

4. Chicken and Dumplings

1 whole chicken (or 3 pounds of chicken parts)

3 quarts water

2 cups chopped celery

1 cup chopped onion

1 cup chopped carrots

2 cups diced potatoes (optional)

3 tablespoons salt (to taste)

2 teaspoons pepper (to taste)

1/2 teaspoon dried parsley flakes (optional)

Step 1: Place chicken in a large pot, add water and bring to a boil. Turn heat down to maintain a low boil and cook for 1 hour. Skim off any foam that forms on top of the water during cooking.

Step 2: Remove cooked chicken from broth; discard bones and skin. Drain broth through colander over a large bowl if desired. To make dumplings: add flour, baking powder and salt to a mixing bowl; stir well with a wooden spoon or spatula until the ingredients are combined well. Add milk slowly until dough forms into a soft ball.

Step 3: Knead on a floured surface until smooth but not sticky; roll out dough into long rope about 1/4 inch thick by 10 inches long. Cut rope into small pieces; drop into boiling broth until done (about 10 minutes). Garnish with parsley if desired before serving.

5. Baked Chicken Nuggets

1 chicken breast, cut into bite-sized pieces

1 egg

1/2 teaspoon salt

1/2 teaspoon pepper

Step 1: Preheat the oven to 375 degrees F (190 degrees C).

Step 2: In a medium bowl, combine the chicken, egg, salt and pepper until well-mixed. Shape into nuggets about 1/4 inch thick x 3 inches long x 1 inch wide (6mm x 7mm x 2cm). Place on a baking sheet lined with parchment paper or a silicone mat sprayed with cooking spray (optional).

Step 3: Bake in a preheated oven until cooked through (about 15 minutes). Serve immediately with your favorite dipping sauce!

6. BBQ Chicken Pizza

1 pizza dough (homemade, or store-bought)

2 cups cooked, shredded chicken (feel free to use leftover rotisserie)

1 cup BBQ sauce of your choice (we recommend Stubbs)

2 cups mozzarella cheese, shredded

1/4 cup gorgonzola cheese or parmesan cheese, grated

Step 1: Preheat the oven to 400 degrees. Roll out the dough on a floured surface until it’s about 1/4″ thick. Transfer to a greased pizza stone or baking sheet and bake for about 10 minutes until golden brown.

Step 2: Remove from the oven and spread BBQ sauce over the crust. Top with chicken and sprinkle with cheese. Return to the oven until the cheese is melted and bubbly, about 15 minutes more. Cut into slices and serve hot!

4 chicken legs

1/4 cup olive oil

1 tbsp. garlic powder

1 tsp. oregano

1/2 tsp. salt

Step 1: Preheat the oven to 375 degrees F (190 degrees C). Add the olive oil, garlic powder, oregano and salt to a large bowl. Stir until combined well and set aside. Place the chicken legs into a baking dish and cover them with foil.

Take the foil off of the baking dish and brush some of the prepared sauce onto each of the chicken legs with a pastry brush or spoon until fully covered with a thin layer of sauce (do not add more than 1 tablespoon per leg).

Step 3: Bake for an additional 10 minutes uncovered or until lightly browned on top. Serve hot with your favorite sides!

Step 4: Remove from the oven and brush on the honey mustard mixture while still warm. Serve immediately if desired or store leftovers in an airtight container in the refrigerator for up to 4 days.

9. Lemon Pepper Baked Chicken Wings

2 pounds chicken wings

2 tablespoons lemon pepper seasoning

Step 1: Preheat the oven to 400 degrees Fahrenheit. Rinse and pat dry the chicken wings before seasoning with lemon pepper and placing in a baking dish. Bake for 35 minutes or until crisp and browned. Enjoy!
